Phages in Food Industry Biocontrol and Bioremediation

Abstract: Bacteriophages are ubiquitous in nature and their use is a current promising alternative in biological control. Multidrug resistant (MDR) bacterial strains are present in the livestock industry and phages are attractive candidates to eliminate them and their biofilms. This alternative therapy also reduces the non-desirable effects produced by chemicals on food. The World Health Organization (WHO) estimates that around 420,000 people die due to a foodborne illness annually, suggesting that an improvement in foo… Show more

“…Likewise, Bardina et al [69] administered a solution of phage cocktail against S. Typhimurium twice a day on days four and five after infection, which reduced the bacterium by one logarithmic unit on days five and six after treatment. This reduction in bacterial loads and shedding of phages could also have further benefits, as it could actively lower Salmonella loads in the environment, reducing the potential for feedback contamination [70,71].…”

“…As a further potential improvement, at the moment limited to the hospital environment, specific removal of individual bacterial targets could be accomplished by the addition of lytic bacteriophages to cleansers. Bacteriophages are viruses infecting only bacteria with high specificity and rapidity, and their successful applicability has been reported for the decontamination of food and food-processing surfaces in industrial settings [111]. No studies on the effectiveness of phages in domestic environments are available yet, however their effective application against MDR bacterial strains was reported in the hospital environment [112,113], suggesting that a combined phage and probiotic-based cleaning may provide an effective way to stabilize the BE microbiome in different settings.…”

“…Similarly, a cocktail of phages is widely used to control antibiotic-resistant Staphylococcus aureus and P. aeruginosa in the treatment of chronic otitis infections [64]. In the food industry, phage cocktails are used as an innovative therapeutic approach to treat various foodborne pathogens, such as Salmonella entrica, Listeria monocytogenes, Escherichia coli, Shigellasonnei, and Campylobacter jejuni for pre-and post-harvesting food protection and processing to save millions of lives from food poison-mediated diseases [71][72][73][74]. P1 cocktail consisting of six phage isolations may kill 98% of R. solanacearum through direct application via soil drenching for the biocontrol of bacterial wilt disease of potato and tomato [61,75].…”
