Phase relations in the solvent winterization of molecularly rearranged peanut oil and cottonseed oil

Abstract: Summary Systematic phase‐relation data have been obtained to determine the effect of either mild or extensive molecular rearrangement on the winterization behavior of peanut or cottonseed oils. The results show that the introduction of the molecular rearrangement step before solvent winterization is disadvantageous. A larger percentage of solid must be removed to obtain a winterized oil, especially for cottonseed oil, and lower yields result.
