Physical Properties and Chemical Compositions of Raw Cow Milk in Milk Shades Around Addis Ababa, Ethiopia

Abstract: Milk has an important diet for humans and animals. The aim of this study was to evaluate the physical property and chemical composition of raw cow's milk in central highlands of Ethiopia. Raw milk samples of 240 were collected from four sites of Wolmera, Selale, Sebeta, and Debrezeit for physical and chemical composition analysis. Physical parameters of pH, titratable acidity, specific gravity, freezing point and chemical composition of total solids, protein, fat, ash and lactose were tested in this study. The… Show more

“…The density of dairy milk depending on the lactation period, milking, feeding and breeding. While the quality of milk is influenced by milk adulteration (Asefa et al, 2019;FAO, 2020). Based on the results of the research, the density of dairy milk sample, both milk control and milk with ozonation treatment, has a density that still in FAO (1.026-1.034 g/cm 3 ) and Indonesian law standards (1,028 g/cm 3 ).…”

“…The main physicochemical parameters of milk (solids not fat, protein, fat, density and pH) are characteristics that depend on the stage of lactation, milking routine, diet, breed, as well as storage conditions and their study allow monitoring the quality of milk [16]. In this context and the importance of dairy production and its derivatives in food safety, the objective of this research was to evaluate the physicochemical and sanitary parameters of bovine milk collected in 31 collection centers and dairy processors in the Amazon region.…”
