Physical Property of Carp Muscle during Rigor Tension Generation

Abstract: The effects of rigor tension generation on the postmortem tenderization process of fishh muscle was investigated by measuring the breaking strength , creep and recovery properties. The postmortem time range of the sharp decrease in breaking strength of stressed and unstressed carp muscle coincided with the time required for a rigor tension peak to occur . The temporary increase of breaking strength and the minimum compliance were detected at the onset of tension generation , and these values in stressed fi sh … Show more

“…Stress and physical activity during transport usually lead to the loss of product quality, such as reducing fish freshness, softening muscle texture, and lowering filet yield. Exposure to stress can have an impact on the economics of fish aquaculture (Nakayama et al, 1994).The aim of this study was to assess a transport stress response, i.e. the effect of pre-transport manipulation procedures and long-distance transport per se, to some biochemical and haematological indices of three-years-old common carp, Cyprinus carpio (L).…”

“…The pre-rigor period must be long enough to ensure that bleeding, gutting, washing, chilling and packing take place before the onset of rigor mortis. Ante-mortem handling stress has also adverse effects on product quality such as reducing fish freshness and softening muscle texture (Izquierdo-Pulido et al 1992;Nakayama et al 1994).…”
