I Juliyarsi,
A Sandra,
S Melia
et al.

Abstract: Dadiah is a traditional fermented buffalo milk originating from West Sumatra, Indonesia and has health benefits. The aim of this study was to evaluate the effect of the addition of Clitoria ternatea flower extract addition (0,5%, 1%, 1,5%, and 2%) on the moisture content, hardness, total lactic acid bacteria, antioxidant activity, and total phenolic content of dadiah jelly candies. The results showed that the addition of Clitoria ternatea extract increased the moisture content, decreased the hardness value, in… Show more

“…These gummies maintained their probiotic properties for at least 90 days of storage. Juliyarsi, Sandra, Melia, Setiawan, and Nurhayati, and Pangestu, S. (2023) successfully enhanced the functional properties of dadiah jelly using Clitoria ternatea flower extract, resulting in improved antioxidant activity and total phenolic content. Elgamily, El-Sayed, El-Sayed, and Youssef (2023) discovered that jelly made from a natural prebiotic grape seed extract, combined with Lactobacillus rhamnobacteria, exhibited an anticariogenic effect.…”
