Physicochemical properties of dietary fiber of bergamot and its effect on diabetic mice

Abstract: Bergamot (Citrus medica L. var. sarcodactylis) contains different bioactive compounds, and their effects remain unclear. Therefore, the structural and bio-function of bergamot dietary fiber were investigated. A sequential extraction procedure was utilized to obtain soluble dietary fiber (SDF) and insoluble dietary fiber (IDF) from bergamot. The main monosaccharide in SDF and IDF is arabinose. SDF had a porous structure, which enhanced the water and oil holding capacity, as well as the cholesterol and glucose a… Show more

“…HP and E‐HP treatments maximized the ability for glucose adsorption of the SDFs, which seemed to be the effect of HP. A high glucose adsorption value is a result of increased porosity (Liu et al., 2022), and HP can convert the DF structure into porous and make it looser (Ouyang et al., 2023).…”

“…Very recently, in addition to polyphenols, other bergamot constituents, such as the soluble (SDF) and insoluble fiber fractions, have attracted scientific interest [ 31 ]. SDF is characterized by a porous structure, which enhances the water and oil holding capacity, as well as cholesterol and glucose absorption.…”

“…Soluble fibers have been effective in reducing metabolic syndrome parameters. In diabetic db/db mice, bergamot fibers were found to be effective in regulating glycemia, enhancing insulin sensitivity, regulating glucose homeostasis and effectively controlling blood lipid levels [ 31 ].…”

“…Different types of dietary fiber have different physical and chemical properties, determining whether they exhibit beneficial effects through different pathways [ 18 ]. Previous studies have indicated that, compared with IDF, the SDF extracted from bergamot adsorbs cholesterol and glucose more effectively due to its porous structure [ 19 ]. IDF plays a beneficial role in promoting defecation [ 20 ] and supporting the growth of intestinal microorganisms [ 21 ].…”
