Pomegranate (Punica granatum L.) Peel Extracts as Antimicrobial and Antioxidant Additives Used in Alfalfa Sprouts

Abstract: Aqueous and ethanolic pomegranate peel extracts (PPE) were studied as a source of phenolic compounds with antimicrobial, anti-quorum sensing, and antioxidant properties. The aqueous extract showed higher total phenolic and flavonoid content (153.43 mg GAE/g and 45.74, respectively) and antioxidant capacity (DPPH radical inhibition: 86.12%, ABTS radical scavenging capacity: 958.21 mg TE/dw) compared to the ethanolic extract. The main phenolic compounds identified by UPLC-DAD were chlorogenic and gallic acids. T… Show more

“…On the other hand, plant-derived antimicrobial agents were shown to possess anti-biofilm activity by disrupting the quorum sensing process [ 186 ]. Quorum sensing is a communication mechanism that bacteria utilize to coordinate the expression of certain genes, including those involved in biofilm formation.…”

“…However, combining these three compounds in doses of 0.00024 mg/mL + 0.00012 mg/mL + 0.000014 mg/mL, respectively, was more effective against biofilm development. In addition, Cruz-Valenzuela et al [ 59 ] determined that the aqueous extract of Punica granatum L. inhibited the growth of Listeria monocytogenes and S. Typhimurium at concentrations from 10 to 30 mg/mL (Ambrosio et al [ 60 ]). For E. coli.…”

“…In this way, the bioactive compounds are transferred to the juice, which in turn retains the organoleptic properties of the fruits. Considering the occurrence of many bioactive compounds in the peels [20], they can be exploited to enrich the juice further, providing added value to the pomegranate industry [4,21].…”
