“…Anyway, hydrolysis under acidic pH led to hydrolysates richer in minerals (33% and 41% respectively for Novozym 37020 and Pepsin) while proteolysis under alkaline conditions led to a lower level of minerals (24% and 29% respectively for Protex 6L and Delvolase).
