Predictive Growth Modeling of Listeria monocytogenes in Rice Balls and Its Risk Assessment

Abstract: This study aimed to investigate the growth of Listeria monocytogenes in rice balls and to conduct its microbial risk assessment based on the Korean dietary pattern.
