Preparation of Maleic Anhydride–Polystyrene Microsphere Cross-Linking Shikonin and Oxidized Nanocellulose Film for Freshness Monitoring

Abstract

This paper fabricated a new kind of maleic anhydride–polystyrene microsphere–shikonin/oxidized nanocellulose film with freshness monitoring function. Shikonin was used as a color indicator, the oxidized nanocellulose was used as a matrix, styrene–maleic anhydride microspheres were used as a cross-linking agent, and glycerin was used as a plasticizer. The morphology, microstructure, structural stability, and mechanical properties of the styrene–maleic anhydride microsphere–shikonin/oxidized nanocellulose film were characterized. Then the pH responsiveness and food freshness monitoring performance were tested. Test results showed that the styrene–maleic anhydride microsphere–shikonin/oxidized cellulose film could be applied in the freshness monitoring of pork and shrimp.
