Abstract: Presence of 1-methyl-1,2,3,4-tetrahydro-,8-carboline-3-carboxylic acid, a precursor of a mutagenic nitroso compound, in soy sauce ( Contributed by Takashi Sugimura, February 22, 1983 ABSTRACT After treatment with nitrite, Japanese soy sauce was strongly mutagenic to SalmoneUa typhimurium TAIOO without S9 mixture.
