Probiotic profiling of Leuconostoc species isolated from a traditional fermented cassava product

Abstract: The various properties of lactic acid bacteria have made them good auxiliary in the manufacturing process in agro food industries and farms. They are widely used as probiotics which can be defined as living microorganisms that have beneficial effects on human health probiotics could replace antibiotic growth promoters in livestock without creating new threats such as that observed with antibiotics. Before their use as probiotics lactic acid bacteria require a perfect knowledge in view to their biochemical and … Show more

“…The present study obtained a salmonella resistance rate to tetracycline of 39.06%, which is lower than those obtained by Hamadou et al [11 ] in Chad, who obtained 51.22%, and Coulibaly et al [5] in Côte d'Ivoire, who obtained 100% resistance to tetracycline. This could be explained by the fact that on poultry farms, many farmers use antibiotics to prevent and cure disease.…”

“…However, recent years have seen the spread of antimicrobial resistance among non-typhoidal Salmonella isolats in humans [8] . This antibiotic resistance represents a threat to human health and a real public health problem [16,11,5,6] . Certain strains of multi-resistant Salmonella of animal origin are suspected of having acquired their resistance genes before being transmitted to humans via the food chain [7,14] .…”

“…Milk plays an important role in bone growth, maintaining body integrity and health through its composition of minerals, fats, proteins, carbohydrates and vitamins [1]. Milk microbiota contains many bacteria, some are useful and necessary for her transformation to other products as lactic acid bacteria or molds used for the maturing of cheese and yeasts transforming sugars to alcohol [2-4].…”

“…These results show that Salmonella gallinarum infections are a reality in modern poultry farms in Mali. Indeed, it shown, that avian salmonellosis is one of the major constraints both in Mali [6,11] and in other countries of the sub-region such as Senegal [12, 13, 14, and 15] and Côte d'Ivoire [16]. Various authors report that the prevalence of Salmonella spp.…”
