Process of Producing Parboiled Rice with Different Colors by Fluidized Bed Drying Technique Including Tempering

Abstract: Steamer is utilized to gelatinize rice starch. High pressure or long steaming time is conventionally applied to obtain the dark brown color of the product. A new alternative method to produce dark brown parboiled rice was proposed in this work. High temperature fluidized bed drying technique including tempering was therefore explored to determine the operating condition to meet the requirement of light and dark brown parboiled rice along with high head rice yield. In addition, the couple of heat and mass trans… Show more

“…The paddy was cleaned and soaked in water at a temperature of 55C for 260 min so that its moisture content was increased to 45 g water/g dry matter [4]. The soaked paddy was then steamed at 100C for 20 min and tempered at an ambient condition for 10 min before drying.…”

“…The grains were subjected to high temperatures of 130 and 150°C and in both cases alterations in rice quality were observed. Fluidized bed drying was explored by Bootkote et al (2016), which verified the need to reduce the drying air temperature and increase the tempering time to meet rice quality requirements.…”

“…Thus, modern paddy drying operations usually include a tempering stage to balance moisture within grains, minimizing stress and cracking, and enhancing milling quality by reducing breakage [12,13]. This process not only improves grain hardness and allows for final moisture content adjustments but also contributes to energy savings by optimizing subsequent drying phases [14]. Additionally, the tempering process provides a crucial opportunity to recycle residual heat and increase the overall energy efficiency of the system [15,16].…”
