Process standardization for the manufacture of Thabdi Peda

Abstract: Traditional dairy products in India are manufactured using age old methods. Such methods varies from place to place. For industrial production of such products a standardized process is needed. Present study was designed to arrive at a method of manufacture for Thabdi Peda, a very popular sweet in Saurashtra region of Gujarat. Range of process parameters like fat percent of milk (4 to 8 %), rate of sugar addition (6 to 10 %) and duration of final heat desiccation (20 to 60 min) were studied and optimum values … Show more

“…The milk production of India in the year 2015-2016 had reached 155.5 million tons, the estimated demand for milk is likely to be around 200 million tons in the year 2021-2022(Anonymous, 2017. Milk utilization pattern reveals that indigenous dairy products are India's largest selling and most profitable segment, accounting for 50-55 percent of milk produced in the country is diverted for preparation of indigenous milk products (Modha et al, 2015), while only 5-6 percent of total milk produced in India is used to manufacture western dairy products such as ice cream, butter, cheese, powder, etc., (Pal and Raju, 2010).…”

“…Traditional dairy products have great commercial significance as they account for over 90% of all dairy products consumed in the country (Aneja et al, 2002). About 50-55% of milk produced is converted into a variety of Indian milk products by the traditional sector (Modha et al, 2015) using processes such as heat desiccation, heat acid coagulation and fermentation, out of which…”

“…Also intramolecular hydrogen bonding and Natural Bond Orbital analysis (NBO) which plays an important role to stabilize and charge delocalization in the molecular structure are not yet reported. Many researchers [3][4][5][6][7][8] analyzed the fluconazole in various aspects and methods. Hence in the present investigation our attention has been turned to make thorough investigation on fluconazole using both experimental and theoretical methods.…”
