Production and characterization of a carotenoid-rich peach palm flour

Abstract: Neste trabalho foi produzida e caracterizada uma farinha de pupunheira enriquecida com carotenóides visando agregar valor ao fruto da pupunheira, uma fruta amazônica ainda negligenciada comercialmente.
