Production, carcass characteristics and valuable cuts of beef breed bulls and heifers in Finnish beef cattle population

Abstract: The objective of the present study was to determine growth and carcass traits of beef breed bulls and heifers in the Finnish beef cattle population. The data collected from Finnish slaughterhouses included observations of 6323 and 2385 Hereford (bulls and heifers, respectively), 4421 and 1794 Charolais, 4335 and 1951 Limousin, 4068 and 1692 Aberdeen Angus, 2151 and 774 Simmental, 344 and 147 Blonde d’Aquitaine animals. For estimating valuable cuttings, a separate dataset including in total 1112 bulls and 260 h… Show more

“…The average slaughter age for AA and NR bulls in Finland is 571 and 592 d, respectively (Huuskonen, ; Pesonen and Huuskonen, ), which is clearly longer than the targeted slaughter age in the present experiment. However, the average carcass weight of the AA bulls in the present study (377 kg) was 2% higher than that in Finland on average (368 kg; Pesonen and Huuskonen, ). The carcass weight of the NR bulls was 8% lower in the present study (303 kg) than the average carcass weight in Finland (330 kg; Huuskonen, ).…”

“…Pfuhl et al ., ; Alberti et al ., ). Data sets collected from slaughterhouses also show superior growth and carcass conformation of beef breeds compared with dairy breeds in Finnish cattle (Huuskonen et al ., ; Huuskonen, ; Pesonen and Huuskonen, ). The lower dressing proportion and conformation score of the NR bulls in the present experiment can also be explained partly by their lower average carcass weight compared with AA bulls because it is well established that these traits increase with increasing carcass weight (e.g.…”

“…Before slaughter the bulls were weighed on two consecutive days. The target for the average carcass weight was 400-410 kg, which is currently the average carcass weight for slaughtered Simmental bulls in Finland (Pesonen and Huuskonen 2015). The LWG was calculated as the difference between the means of the initial and final LW divided by the number of growing days.…”

“…These results may have occurred because the animals evaluated had similar genetic origin and age. According to Pesonen and Huuskonen (2015), genetics is one of the factors that most influence these characteristics, in which animals from continental breeds have greater musculature and lower fat thickness in relation to animals of British origin. Zebu animals are in an intermediate zone of precocity in relation to the animals of continental origin (late) and the animals of British origin (precocious).…”
