Abstract:Prebiotic galacto‐oligosaccharides (GOSs) are synthesized by transgalactosylation of lactose using β‐galactosidases. Well‐established, large‐scale production of GOS is performed by stirred‐tank reactors (STR) operating in batch fashion.
