Profiling of Nutritionally Vital Bioactive Compounds in Emerging Green Leafy Vegetables: A Comparative Study

Abstract: Green leafy vegetables (GLVs), especially lettuce and spinach, are the key source of bioactive antioxidants in a diet. This research compared the contents and composition of lettuce and spinach bioactive compounds with emerging GLVs, moringa and fenugreek. Liquid chromatography (LC)-mass spectrometry (MS) with single ion monitoring (SIM) was used to examine carotenoids and tocols, while phytosterols were examined using gas chromatography (GC)-MS. Among the studied GLVs, the (all-E)-lutein was the most dominati… Show more

“…Cheong) [ 62 ]. In another recent study on GLVs, α-tocopherol levels ranging from 22.0 µg/g FW in spinach to 87.7 µg/g FW in Moringa were recorded [ 43 ]. Considering these previous reports, Toona sinensis foliage investigated in the present study is a rich source of α-tocopherol.…”

“…The lipophilic bioactive carotenoids and tocols were simultaneously extracted from fresh foliage using our recently optimized method [ 43 ]. In sum, a 2 g fresh sample was placed into a Falcon 50 mL conical centrifuge tube and homogenized with 25 mL of a solvent mixture (acetone/ethanol/cyclohexane, 1:1:2, v / v ) containing 0.1% butylated hydroxytoluene (BHT) as an antioxidant [ 44 ].…”

“…Carotenoids, for instance astaxanthin, β-carotene, zeaxanthin, and lycopene, have displayed noteworthy characteristics as antioxidants. Moreover, their antioxidant mechanism enables carotenoids to impede the onset and progression of numerous medical conditions, including cancer, skin disorders, eye diseases, diabetes, and coronary artery disease [45]. Nevertheless, an arduous task lies in the categorization of carotenoids as either anti-or pro-oxidant compounds due to their multifaceted nature and the diverse oxidation byproducts they produce [46].…”

“…The analysis of phytosterols involved silylation and was performed using the QP2010 SE GC-MS instrument manufactured by Shimadzu, Tokyo, Japan. The instrumental conditions are summarized in Table 4 [43,44]. To verify the identity of phytosterols, we compared the mass fragmentation pattern with authentic standards and reference databases, including NIST08S, NIST08, and Wiley9.…”
