“…Thus, phenolic compounds including flavonoids are desirable in inhibiting the progression of inflammation due to their antioxidant activity and anti-inflammatory activity. In particular, rosmarinic acid, mostly existing in rosemary and ethanolic extracts obtained from plants, was found to exert anti-inflammatory effects on cells, possibly through inactivation of enzymes such as 5-lipoxygenase, inducible nitric oxide synthase and cyclooxygenase-2 (COX2), and signal proteins such as TNF-α, mitogen-activated protein kinases (MAPKs), nuclear factor kapper B (NF-kB), E-cadherin, vimentin, p38, c-Jun NH 2 -terminal kinase 1/2 (JNK1/2) and Janus kinase 2 (JAK2), as well as signal transducers and activators of transcription 1/3 (STAT1/3) [22][23][24].
