Heavy metals are the most harmful contaminants which affect people health.The research objective of the present study was to determine the levels of cadmium (Cd), lead (Pb), chromium (Cr), copper (Cu) and zinc (Zn) in grey mullet fish collected from Barseque fish farm (Behera Governorate, Egypt). Moreover, heavy metals were determined in irrigation and Barseque farm water. Quality Index Method (QIM) scores showed good freshness condition of collected fresh fish. Variations in chemical composition of grey mullet fish collected from fish farm during winter and summer were noticed. Moisture content highly significant decreased in summer than in winter while fat increased in summer than in winter. Electric conductivity significantly increased in irrigation and farm water in summer, while there was no difference in pH. The results of heavy metals showed that the levels of Cd, Pb, Cr, Cu and Zn in different fish organs(liver, gills and muscles) were significantly higher in summer than winter, it was in the increasing order of liver>gills> muscles. Cadmium and lead concentrations in irrigation water and farm water that detected during winter and summer season were higher than the maximum permissible limit according to WHO/FAO and Egyptian Ministry of Water Resources and irrigation, law 48/1982.Cadmium, copper, lead and chromium concentrations in irrigation water and farm water showed no significant difference between winter and summer but zinc were significantly higher in summer than winter. Heavy metal concentrations that measured during winter and summer seasons in grey mullet fish organs were lower than the minimum acceptable daily intake recommended by WHO. Generally, the values of metals in the fish muscles were accepted by the international legislation limits and are safe for human consumption. On the other hand, it was strongly recommended not to eat head with gills or livers of fish. Conclusively, a regular monitoring program of heavy metal is recommended for protecting these organisms, and to reduce the environmental risks.

It was reported that Rubian (tiger shrimp) Penaeus semislcatus, which is consumed as a regular part of the diet in the Arabian Gulf, could be beneficial due to its high content of phosphorus, zinc, calcium, copper, magnesium, and protein (Musaiger & D'Souza, 2008). The quality of fish and fish products is multifaceted and includes a wide range of issues, such as safety and freeness from health risks, nutritional value or quality, convenience, availability, and integrity, as well as the freshness of fish, sensory characteristics, physical features, type, and quantity of products. Furthermore, fishing, storage, handling, processing, and procedures, in addition to conditions such as time and temperature that affect the fish products' safety and quality are significant factors (Abbas et al., 2008). A lack of information about the enhanced fish management and postharvest processes contributes to low-quality fish products and fisheries (Food and Agriculture Organization, 2020). In order to be confident about health and safety, it is essential to maintain high levels of fish quality throughout the whole food chain, from catching to consumption (Hyldig & Green-Petersen, 2005), Consumers' requests for excellent, healthy, and safe foods is growing globally (Sen, 2005). Fish meat and seafood products are moderately unsteady in fresh and frozen preservation. The organoleptic characteristics of fish occur quickly due to multiple factors. Biochemical (i.e., enzymatic) changes and microbial effects yield quantifiable alterations in fish during fresh (iced) storage, while frozen preservation induces physical, chemical, and biochemical reactions that reduce fish quality (Woyewoda et al., 1986). Effect of Different Dietary Protein Levels on Proximate Composition of Labeo Calbasu From Pakistan

Proximate body composition analysis implies percent composition of moisture, lipids and protein. The aim of the study of to evaluate the effect of the various levels of dietary protein on the body composition of Labeo calbasu. Fish were fed with 15%, 20% and 25% crude protein in diet in treatment 1 (T1), treatment 2 (T2) and treatment 3 (T3), respectively. At the end of feeding trial, a total of 120 samples of Labeo calbasu, 40 belonging to each of the three dietary protein treatments were evaluated for proximate body composition. Mean water, ash, fat and protein in wet weigh of L. calbasu were ranged 76.59-77.19%, 3.63-4.68%, 4.08-4.86% and 13.87-15.66%, respectively, in different treatments. Ash and fat percentages were found highest in T1, water parentage was found highest in T2, while mean protein content percentage value was found highest in T3 (25% crude protein). All the body constituents were found to be highly correlated (P<0.001) with the fish size (length and weight) in T1, T2 and T3, except for ash contents in T2 (r = 0.472) and T3 (r = 0.412) showing correlation at P<0.01. Slope (b value) indicated positive correlations in all the relationships between fish size and different constituents. No studies on L. calbasu have yet attempted to evaluate the effect of dietary protein levels on body composition and to relate the size of the fish with the parameters of whole body composition. Thus, this study will provide the first reference from Pakistan.
