“…The Iberian red deer cholesterol content is similar to the cholesterol content of venison from free-ranging female elk (50.2 mg/100 g of meat; Cervus elaphus nelsoni) (Rule, Broughton, Shellito, & Maiorano, 2002) and feral Yeso sika deer (46.3-58.6 mg/100 g of meat; Cervus nippon yesoensis) (Kasai, Sakai, Ishijima, & Hasegawa, 1999), but is considerably below the cholesterol content found in Slovenian red deer which ranged from 73.5 to 94.6 mg/100 g (Polak et al, 2008).
