Purification and characterization of glutaminase from Iraqi fruit of ‎ Capsicum annuum

Abstract: L-glutaminase has recently attracted much attention due to its medicinal and industrial potential. It's an antileukemic drug with flavor-enhancing properties when used in fermented foods manufacturing.
