Quantification of Resveratrol in Different Parts of Solid Pinotage Winery Waste: Investigating the Variance Between Consecutive Harvests

Abstract: Resveratrol is phenolic compound that is produced by several plant species as a protection mechanism against biotic and abiotic stress. Resveratrol is currently being investigated as nutraceutical supplement, and there is a market value for the compound. The aim of this work was to investigate, through consecutive harvests the variability of solid winery waste as a source of resveratrol as an antioxidant supplement. In this study the different parts of Pinotage solid winery waste from a 2018 and 2019 harvests … Show more

“…Abundance of resveratrol in different sources is presented in Table 1. Food processing byproducts are considered readily available economical sources of resveratrol, such as grape pomace, cane and leaves [14], peanut roots [15], soybean seed coat [16], hop pellets [17] and so on. For instance, grape cane contains about 5 mg/g dry weight [18].…”

“…Resveratrol is predominantly found in the skins of grape berries [38,39]. This is particularly significant as the skin is used extensively in the production of red wine, where resveratrol is extracted during the fermentation process [40][41][42][43]. Leaves also contain resveratrol, although the concentration can vary widely depending on the berry variety and the environmental factors affecting the plant [44,45].…”
