“…Lactose can be hydrolyzed into glucose and β-galactose by β-galactosidase, and glucose and β-galactose could be used for cellular growth of T. sinense. Further study showed the absence of β-galactosidase activity in the truffle fermentation system, which might explain why the growth of T. sinense was seriously inhibited when lactose was used as a carbon source (Tang et al 2008a). Thus, sucrose was viewed as the most favorable carbon source for truffle fermentation.…”
