Recent advances in utilization of flaxseed as potential source for value addition

Abstract: Flax seed (Linum usitatissimum) is an important oilseed crop which has gained importance since last few decades due to its unique nutrient profile. Flax seed comprises high amount of fiber and is a significant source of α-linolenic acid in the diet of vegetarian people. It is evident from several studies conducted that flaxseed carries functional ingredients and provide health benefits. Omega-3 fatty acid, lignan and dietary fiber are major bioactive components of flaxseed which can be delivered through value … Show more

“…Conversely, flaxseed oil contains high levels of long-chain polyunsaturated (ω-3) fatty acids. This makes it much more susceptible to lipid oxidation but gives it a more beneficial health profile (Goyal, Sharma, Upadhyay, Gill, & Sihag, 2014;Kaur et al, 2018). Differences in the melting/crystallization behaviors, viscosities, and interfacial tensions of edible oils also impact the formation and stability of oil-in-water emulsions, and should be considered when formulating them (McClements, 2015).…”

“…A range of food products (e.g. bread, cookie, muffin, beef patties, pasta, noodles, breakfast cereals, ice cream) have been developed using linseed as an additive (Koca & Anil, ; Khouryieh & Aramouni, ; Kajla et al ., ; Kaur et al ., ; Wandersleben et al ., ). The food applications of linseeds remain to be extended to include CSB.…”

“…In addition to, cellulose, hemicellulose and lignin are insoluble fiber constituents abundantly found in flaxseed while mucilage gums form is the soluble fiber fraction [38]. Flaxseed is an equally good source of minerals, particularly, phosphorus, magnesium, calcium, iron, zinc and very little amount of sodium [39]. However, flaxseed contains toxic components such as trypsin, myo-inositol phosphate inhibitors, cadmium, cyanogenic glycosides [40].…”
