Recent Advances on Peptide-Based Biosensors and Electronic Noses for Foodborne Pathogen Detection

Abstract: Foodborne pathogens present a serious issue around the world due to the remarkably high number of illnesses they cause every year. In an effort to narrow the gap between monitoring needs and currently implemented classical detection methodologies, the last decades have seen an increased development of highly accurate and reliable biosensors. Peptides as recognition biomolecules have been explored to develop biosensors that combine simple sample preparation and enhanced detection of bacterial pathogens in food.… Show more

“…Furthermore, peptides exhibit greater mechanical and conformational stability than proteins, making them interesting for robust applications against heat, light, and shear stress. 104 Natural antimicrobial peptides, in silico design, protein-derived peptides, and naturally occurring antimicrobial peptides are some of the methods that could be used for peptide selection and modification, where a study related to them was reviewed by Escobar et al 102 However, both chemical and biological techniques can be used for further peptide synthesis. The chemical synthesis is carried out utilizing tert-butoxycarbonyl (t-Boc) and the typical synthetic technique (Fmoc) solid-phase peptide synthesis (SPPS).…”

“…By combining TENGs with bioreceptors or bioassay systems, they may be utilized as biosensors to identify biological signals or biomarkers. 21 TENG-based biosensors provide mobile, self-powered options for environmental and medical monitoring. TENGs can also provide regulated electrical impulses to activate cells, tissues, or neurons to deliver electrical stimulation for therapeutic applications.…”
