Recovery of Polyphenols from Agri-Food By-Products: The Olive Oil and Winery Industries Cases

Abstract: The production of olive oil and wine are two of the main agri-food economic activities in Southern Europe. They generate large amounts of solid and liquid wastes (e.g., olive pomace, olive mill wastewater, grape pomace, grape stems, wine lees, and wine processing wastewater) that represent a major environmental problem. Consequently, the management of these residues has become a big challenge for these industries, since they are harmful to the environment but rich in bioactive compounds, such as polyphenols. I… Show more

“…The phenols of olives have several health‐promoting properties, e. g., neuroprotective, which are associated with their antioxidant and anti‐inflammatory benefits [4–8] . Several methods have been developed to facilitate the degradation or extraction of phenolic compounds, such as chemical oxidation, solvent extraction, membrane systems or adsorbents [9–20] . However, all these systems require several laborious steps.…”

“…Several techniques are used to recover polyphenols from wine by-products, such as conventional solvent extraction, also called solid–liquid extraction (SLE), which is the most applied technique from an industrial point of view [ 32 ]. Several solvents have been studied for the extraction of polyphenols, but the preferred systems for food, pharmaceutical or cosmetic applications are those based on water and ethanol [ 33 ].…”

“…Due to the current environmental situation, increasingly more agro-industries are dedicating their time and resources to minimize the waste generated, not only by optimizing their production processes but also by revaluing and reusing this waste at the end of the process, contributing to the concept of a circular economy [ 1 ]. Agri-food wastes are phytotoxic and a major environmental concern; so, their disposal is an important problem for industries, due to the environmental impact and high disposal costs [ 2 , 3 ].…”
