Abstract:The influence of germination temperatures and time on anti-nutritional/nutritional, nutraceutical and functional, characteristics of buckwheat and amaranth flour was evaluated. The protein, fiber, reducing and non-reducing sugars increased as the germination temperature and time were prolonged.
