Abstract: Sugar alcohol or sorbitol is a derivative product of carbohydrates, namely glucose through the hydrogenation process with hydrogen gas. The glucose used comes from flour, because the carbohydrate content in tapioca flour is considered the highest compared to other flour ingredients.
