Sardine Oil Purification with Winterization

Abstract: Sardine oil was dominated by palmitic acid which amount of 20.25%. It can be reduced by purification in 4 stages: degumming, neutralization, bleaching, and winterization. This study aimed to reduce the saturated fatty acid in refined fish oil using winterization with various temperature treatment. The best quality of refined oil was obtained by centrifugation treatment at 10,000 rpm, Magnesol XL 1%, and winterization at temperature of 4°C. The treatment resulted free fatty acids of 0.75%, peroxide value of 5.1… Show more

“…In contrast, the solid fraction showed high amounts of SFAs, such as C 14:0 (13.90%), C 15:0 (3.04%), C 16:0 (39.02%), and C 18:0 (8.01%), as well as unsaturated fatty acids, including DPA (5.02%) and DHA (18.11%), corresponding to 90.10% of the total solid fraction. Long-chain SFAs and monounsaturated fatty acids with relatively high melting temperatures present in fish oil usually precipitate out of solution during winterization . However, this precipitate contains also some amount of omega-3 fatty acids.…”

“…Long-chain SFAs and monounsaturated fatty acids with relatively high melting temperatures present in fish oil usually precipitate out of solution during winterization. 43 However, this precipitate contains also some amount of omega-3 fatty acids. While fish such as mackerel, herring, sand eel, and sparling (European smelt) contain large amounts of omega-3 fatty acids in their oils, 44 the presence of other fatty acids seems to lead to stearin (undesirable high melting point parts of oil) formation during winterization.…”

“…Subsequent to the extraction of omega-3 fatty acids from primary materials via solvent and/or wet extraction processes, fatty acids are rened by distilling sh oil to remove impurities. 32,33 Nowadays, the extraction methods that are more environmentally sustainable, specically winterisation and supercritical uid extraction, are regarded as being of greater signicance. 34,35 However, despite the industry's primary focus on omega-3 fatty acids and PUFAs, over 30% of saturated fatty acids (SFAs) remain unexplored and underutilised.…”
