SECAGEM CONVECTIVA DE MELÃO (Cucumis melo L.) COM E SEM PRÉ-TRATAMENTO ULTRASSONICO

Abstract: RESUMO -O objetivo deste trabalho foi avaliar o efeito da aplicação de ultrassom como pré-tratamento na secagem convectiva de melão amarelo (Cucumis melo). Para a etapa de pré-tratamento, as amostras foram submetidas a ondas ultrassônicas (25 kHz/154W) por 10 e 30 min a 30°C. A secagem foi realizada em secador de leito fixo a 60°C e velocidade do ar de 2,0 m.s -1 . As amostras secas pré-tratadas apresentaram redução no tempo para atingir a umidade de equilíbrio.
