“…Durante o crescimento e, consequente, aumento da massa, a concentração de metal tende a diminuir(KALAC, 2000).As pesquisas citadas utilizam o selênio no processo de acumulação nos cogumelos; esse microelemento é essencial nas funções de atividade antioxidante e regulação da atividade dos hormônios tireoidianos. Várias pesquisas relacionadas demonstraram a capacidade dos cogumelos em acumular selênio orgânico, forma melhor absorvida no organismo humano, durante seu desenvolvimento(ASSUNÇÃO et al, 2014;DA SILVA et al, 2012;OGRA et al, 2004;RATHORE et al, 2018) Os dados demonstram a excelente capacidade dos cogumelos no enriquecimento desses elementos, nesse caso o selênio. Visto esse potencial, abre um leque de investigação sobre a acumulação de outros elementos essenciais como ferro e zinco, sendo possível a produção de biomassa para possíveis inovações uso de resíduos agroindustriais e o cultivo de cogumelos comestíveis pode fornecer uma fonte de renda alternativa para agricultores e, consequentemente, ganhar espaço na mesa de muitas famílias brasileiras para que seja desmistificado os cogumelos, explorando seus benefícios a saúde.Além disso, a capacidade de absorção de nutrientes e elementos do substrato pelos cogumelos tem atraído os pesquisadores na busca de inovação e desenvolvimento de alimentos enriquecidos e com propriedades funcionais.REFERÊNCIASASSUNÇÃO, L.
