Separation of the proteins of egg white and egg yolk and a study of their interactions in whole egg. IV. Electrophoretic studies

Abstract: Zone electrophoresis assisted in the identification of several of the fractions isolated from white, yolk and whole egg, and particularly in following the distribution of the ovalbumin homologues. Certain artifacts in electropherograms of ovalbumin fractions were attributed to aggregation of this substance during freeze-drying. The ovalbumin in whole egg appears to have a slightly higher affinity for diethylaminoethylcellulose than when it is present in egg white only. Characteristics of some unidentified prot… Show more

“…They nevertheless failed to discriminate all egg white proteins. Promising complementary separation methods include electrophoretic separations, which recently underwent considerable improvements, whereas the last studies on egg white proteins, in this field, date from the 1960s and 1970s ( ). SDS−PAGE followed by Coomassie blue detection is the only technique described in recent work for the study of egg white proteins ( , ).…”

“…Electrophoresis on cellulose acetate strips and in polyacrylamide gels was carried out as described previously. 5 Electrophoresis on paper strips (Whatman No. 1) was conducted according to Powrie et al6 After electrophoresis the strips were cut in half lengthwise, one half was stained with bromophenol blue (for proteins) and the other with Oil Red 0 (for lipids).…”

“…More recently, disc-gel electrophoretic separations of chicken egg yolk have been reported (Silano et al 1968;Chang et al 1970;Harduf and Alumot 1971;Parkinson 1972;Cummingham and Varadarajulu 1973;Shantz and Dawson 1974). Seideman and Cotkrill (1969) reported spe ies differences in the cation-exchange chromatograms of chicken, turkey, and goose egg yolk.…”
