Speciation of methylmercury in rice grown from a mercury mining area

Abstract: Methylmercury in uncooked rice occurs predominantly as methylmercury-L-cysteinate, which is effectively removed during the cooking process. a r t i c l e i n f o HgCys is converted to other forms of MeHg, the identity and toxicity of which remain elusive.
