Study on the release and sensory perception of encapsulated d‐limonene flavor in crystal rock candy using the time–intensity analysis and HS‐GC/MS spectrometry

Abstract: This research was conducted to evaluate encapsulated d‐limonene perception and release in rock candy. Microcapsules with wall materials of 75/25 of gum Arabic/Maltodextrin by 20% of wall materials) were produced for using in rock candy. To evaluate the flavor release from rock candy by time–intensity method, a model system was developed and time–intensity sensory evaluation was conducted by trained sensory panelists in order to determine the effect of three different matrices (water, water and flavored rock ca… Show more

“…Regarding the volatile components associated with "clean and refreshing", the prominent constituents encompassed D-limonene, hexahydrofarnesyl acetone, nonanal, hotrienol, (E)-3-penten-2-one, benzyl alcohol, dibutyl phthalate, δ-cadinene, muurolol, τ-cadinol acetate, and 1-ethylpyrrole. Among them, D-limonene has a lemon-like aroma as one of the main aroma components in citrus plants [38] and has been proven to evoke fresh, citrusy [39], and grassy [5] aromas in green teas. Similarly, nonanal, which possesses grassy, citrus, and green characteristics, emerged as a noteworthy aroma-active component in green tea [40].…”

“…For other aromatic compounds imparted with the drying power, we can cite some aldehyde and ketones such as Decanal, Butanal-2-methyl, Isovaleraldehyde (3-methylbutanal), 5-Ethoxydihydro-2(3H)-furanone, 5-Methyl-2(5H)-furanone, H-pyrrol-2-yl-Ethanone, and Pyran-4-one (Table 9) which are mostly food flavorings. D-Limonene presence contributed to give a pleasant lemon-like odor [78,79] to the dried tree tomato fruit samples. Apart from the citrus aroma, the dried tree tomato fruit also possessed other chemical compositions, such as p-cimene, myrcene, α-pinene, Carene-1S-3R-6R-gamma-terpinene, and phellandrene which gives a herbacious, pine, and woody aroma and flavor [80,81].…”
