Abstract: Abstract-Viability of lactic bacteria submitted to dehydration: Importance of the dehydration kinetics. Dehydration of Lactobacillus plantarum by glycerol addition (water depressor) has allowed to show the great importance of the kinetics of water potential decrease on cell viability.
