Survival of pathogens in "Graviera Kritis" cheese made with raw and pasteurized milk

Abstract: A field trial was carried out to investigate the hygienic status of Graviera 'Kritis' cheese made with raw and pasteurized milk. Graviera was manufactured in a small plant in Crete under traditional manufacturing conditions.
