Polysaccharrides already react in hot liquid water and the addition of CO 2 acts as an acid catalyst (Peterson et al, 2008), while the supercritical CO 2 phase offers high diffusivities and was proven to have a swelling effect on plant material (Stamenic et al, 2009).
