Tandem mass spectrometry: a convenient approach in the dosage of steviol glycosides in Stevia sweetened commercial food beverages

Abstract: The use of sweeteners extracted from leaves of the plant species Stevia rebaudiana is increasing worldwide. They are recognized as generally recognized as safe by the US-FDA and approved by EU-European Food Safety Authority, with some recommendation on the daily dosage that should not interfere with glucose metabolism. The results presented here introduce an easy analytical approach for the identification and assay of Stevia sweeteners in commercially available soft drink, based on liquid chromatography couple… Show more

“…Our research group has done extensive work on the identification and molecular characterization of food compounds [41,42,43]. We have developed environmentally friendly methods for the extraction and further chemical manipulation of natural bioactive molecules [44,45,46,47,48,49,50,51,52], reducing or eliminating the use and generation of harmful substances and solvents aiming to encourage green chemistry [53].…”

“…Sweet-tasting steviol glycosides in plant material and food samples have been determined through different methods, including enzymatic hydrolysis [10], HPTLC [9], capillary electrophoresis [11], near-infrared spectroscopy [12], HPLC with UV detection [13,14], UHPLCevaporative light scattering [15], LC-fluorimeter [16], desorption electrospray ionisation MS [17], UHPLC-MS [18], LC-MS/MS [19][20][21] and LC in combination with hybrid quadrupole time-offlight MS [22,23]. Due to current legislation concerning the composition of the Stevia extract, MS is the analytical technique of choice for the identification and assay of targeted and untargeted species in complex mixtures, such as Stevia extract and Stevia-sweetened food.…”
