Abstract:Article InformationThis investigation aimed to evaluate the acidifying, proteolytic, lipolytic and texturizing activities of lactic acid bacteria (LAB) isolated from tropical fruits (pineapple, papaya, orange and banana) collected at Foreke (City of Dschang, Menoua Division, West Cameroon region).
