The 10,000-Year Success Story of Wheat!

Abstract: Wheat is one of the most important cereal crops in the world as it is used in the production of a diverse range of traditional and modern processed foods. The ancient varieties einkorn, emmer, and spelt not only played an important role as a source of food but became the ancestors of the modern varieties currently grown worldwide. Hexaploid wheat (Triticum aestivum L.) and tetraploid wheat (Triticum durum Desf.) now account for around 95% and 5% of the world production, respectively. The success of this cereal… Show more

“…After thousands of years of empirical selection and breeding, modern cultivated tetraploid wheat and hexaploid wheat were formed and widely cultivated, accompanying morphological, phenotypical, and physiological changes [31,48,71]. The domestication and evolution led to modern cultivated tetraploid and hexaploid wheat superseding einkorn, emmer, and spelt wheat, which are treated as relic crops with minor economic importance [1,21]. Einkorn was used at the beginning of agriculture in Europe, whereas its cultivation started to decline in the Bronze Age, probably due to the emergence of freethreshing wheat [60,114].…”

“…Wheat is one of the main cereal crops in the world and a major source of carbohydrates and proteins in the human diet [1][2][3]. An adequate supply of wheat and its processed products (i.e., flour, bread, pasta, biscuit, bear) [4][5][6] can not only ensure food security and social stability but also enrich dietary diversity and avoid malnutrition [2,7,8].…”

“…As one of the world’s top three food crops [ 1 ], wheat is cultivated world-wide due to its unique adaptability and high yield [ 2 ]. Wheat is especially highly appreciated because of its ability to make dough from its flour for preparing baked food products with characteristic taste, smell and high nutritional value [ 3 ].…”
