The biochemical characteristics of coconut (<em>Cocos nucifera</em> L.) water during germination

Abstract: The purpose of this study was to determine the biochemical characteristics of coconut water during germination. The three cultivars most used worldwide were studied; West African Tall 'WAT', Malaysian Yellow Dwarf 'MYD' and improved 'PB121 + ' hybrid. Germinated 'MYD' and 'PB121 + ' had the greatest physical characteristic (water weight). As for the chemical parameters, the amounts of total sugar fluctuated from 25.60 mg/ml to 50.85 mg/ml while the amount of ashes and pH varied from 0.25% to 0.47% and 6.36 to … Show more

“…Coconut does not have a dormancy period, therefore, when the fruit ripens the process of direct germination is also started (Sankaran et al, 2012). During germination, the haustorium grows larger and increases weight while the weight of the endosperm decreases (Soedijanto and Sianipar, 1984;Su'I, 2010;Konan et al, 2017).…”

“…Total weight fruit (g) ± SD because the coconut endosperm is decomposed by enzymes released by the haustorium for institutional development in the formation of new individuals (Soedijanto and Sianipar, 1984;Sankaran et al, 2012;Konan et al, 2017). Thus, the harvesting of overripe coconuts harms the farmers because the thickness of the coconut endosperm has been reduced due to the germination process.…”

“…Côte d'Ivoire is the leading coconut plantation in Africa [1], with several industrial plantations and numerous small private farms, mainly located on the tertiary to quaternary sands along the coast, on which more than 20,000 families depend [2]. Coconut plays a key role in people's lives in terms of social and economic uses [3].…”

“…It is also true for coconut kernel-based products such as desiccated coconut, copra, coconut chips and flakes, and coconut strips and slices (Figure 1), whereby drying is needed in the production of each product. At complete development and full maturity, the coconut comprises an average of 33% husk, 16% shell, 33% kernel, and 18% coconut water (Konan et al, 2009). Generally, the coconut fruit is spherical to oval with a rough outer husk, and the size varies depending on the source and breed (Arulandoo et al, 2017).…”
