The Calcium Quandary: How Consumers use Nutrition Labels

Abstract: It has been a decade since the Nutrition Labeling and Education Act mandated that the Nutrition Facts panel on food labels be formatted with nutrient reference values, namely, percent daily value (%DV). Across a series of three studies, the authors demonstrate that consumers have difficulty using %DV from the Nutrition Facts panel to determine their required calcium intake. “…Our search yielded only one, relatively small study, reporting no associations between nutrition knowledge and comprehension of nutrition labels (Block & Peracchio, 2006). In study 1 (studies 2 and 3 did not meet inclusion criteria), researchers provided a definition of dietary reference values to participants and then administered a brief exercise that asked, and then provided, the daily recommended intake of various vitamins and minerals, including calcium.…”

“…Despite the efforts of policy makers to educate consumers about health claims in general and, more recently, about functional food health claims, one of the main issues confronting all consumers in trying to determine whether to choose a food that makes a functional food health claim or one that does not is the conflicting reports in the media about what is or is not healthful (for a discussion of the "calcium quandary," see Block and Peracchio 2006 and can prevent age-related muscular degeneration (Chung, Rasmussen, and Johnson 2004). Similar debates are likely to occur for many of the ingredients about which functional food health claims are made.…”
