“…Le développement du « prêt à consommer », l'évolution des modes de vie ainsi que la multiplication des discours hygiénistes, diététiques, esthéti-ques, hédonistes -en partie relayés par la sphère marketing -ont engendré un certain nombre de dérégulations qui se traduisent par une certaine « déstructuration, désocialisa-tion, déritualisation de l'alimentation moderne » (Herpin, 1988). Poulain (2002b) a montré qu'on observe, dans la pratique, une simplification des repas et de leur nombre, notamment chez les jeunes, les urbains et les plus diplômés, tout en maintenant une très forte socialisation des repas principaux.
