Abstract:Relevance. Fruits and vegetables are an excellent source of substances with antioxidant and healthy properties. Such substances include polyphenols, carotenoids and triterpenoids. Phenolic compounds have strong antioxidant, anti-inflammatory, antiviral and anti-carcinogenic properties.
