The effect of freeze‐drying, pasteurisation and high‐intensity ultrasound on gastrointestinal stability and antioxidant activity of blueberry phenolics

Abstract: The use of freeze‐drying and high‐intensity ultrasound can ensure better gastrointestinal stability and higher antioxidant activity of blueberry phenolics.
