“…However, significantly higher ( p < 0.05) levels of Glycine (Gly), Alanine (Ala), and Proline (Pro) in the OM group were detected, which may originate from the higher proteolysis due to the change of protein secondary structure. As Jiang et al [ 13 ] reported, ozone treatment led to a lower amount of α-helical and higher amount of β-sheet and random coil, which subsequently promoted protein unfolding and proteolysis [ 36 ]. However, significantly lower ( p < 0.05) concentrations of Cysteine (Cys), Methionine (Met), Lysine (Lys), and Isoleucine (Ile) were determined in the OM group.…”

“…This may explain the observed differences between individuals or animal groups, as not all animals will respond with a similar increase in muscle use during a stressful event. Zhao et al., 2022 investigated the effect of showering time (typically used for decontamination and fecal removal in China) in winter on adrenaline levels and pHu and found that plasma adrenaline was significantly increased with showering time ( p = .012), while pHu increased from 6.05 to 6.23. The observed complexity with clear differences in meat quality outcome and correlation with catecholamine, catecholamine metabolites, and pHu depending on animal sex and breed highlights the complexity of stress measurements as stress causes can be multifaceted, including physical and psychological stressors and the need to perform rapid measurements at the individual level to improve the prediction accuracy for DC predisposition.…”

“…DC continues to be an issue in the industry, with an average reported incidence of ∼1.3% in Canada, ∼3.2% in the United States, ∼10% in China and approximately 5% in Australia (Jose et al., 2015; Mahmood et al., 2019; Zhao et al., 2022). Moreover, pH noncompliance can be unequally distributed geographically, causing extensive economic losses to producers in certain areas (Mahmood et al., 2019).…”
