“…A large complex of proteolytic enzymes carries out the breakdown of storage proteins during the grain germination and subsequently malting. Ungerminated barley contains little proteolytic activity, but it rises rapidly during the early stages of the germination step (Harris, 1962; Zhang & Jhones, 1995a). During mashing, proteolytic enzymes hydrolyze cell wall protein resulting in the exposure of the starch to the hydrolytic enzymes.…”
