The influence of the winemaking process on the elemental composition of the Marselan red wine

Abstract: BACKGROUND The elemental profile of the Marselan wine cycle was studied with a single ion‐beam technique, namely particle‐induced X‐ray emission (PIXE). Samples were collected from all of the major stages involved in the wine cycle, including soil, vine plant, grape, and different stages of wine processing. RESULTS The results show the influence of field practices on the elemental composition of leaves, branches, grapes, and soil. Mechanisms of element precipitation and elimination from the wine were identifie… Show more

“…However, copper levels in grape juice exceeded by 908% the limit established by Brazilian and international norms. On the other hand, Santos et al [ 110 ] verified that the reduction in the copper content during the last stages of the wine cycle is related to its precipitation in the storage tanks. The copper content in the vineyard soils and, consequently, in grape must and wines is related to different factors such as the total amount of copper fungicide applied during the production period, the number of days between the last application and harvest, biological specificity of cultivars during growth, and the varietal characteristics [ 111 ].…”

“…In order to verify the variance of the elemental concentrations of different batches of roasted ground coffee, samples from 11 batches of Melitta Tradicional ground coffee were analyzed using the Particle-Induced X-ray Emission (PIXE) technique. PIXE has been used for the elemental analysis and characterization of foodstuff as wine [10,11], mate tea leaves [12,13], canned tuna [14] and coffee [9,15]. PIXE is an attractive technique for the elemental analysis of foodstuff in general due to the relative simple sample preparation without any wet treatment besides its non-destructive feature 5 [9,11].…”

PIXE is an attractive technique for the elemental analysis of foodstuff in general due to the relative simple sample preparation without any wet treatment besides its non-destructive feature 5 [9,11]. In addition, PIXE is a multielemental and fully quantitative technique with a relatively short acquisition time (in the order of 300 -400 s per sample).…”

“…With its strong adaptability to the environment, strong resistance to common diseases, and small berries conducive to extracting aromatic and deep-colored wines with soft tannins, it became a very advantageous grape variety, and was officially registered as a wine grape in France in 1990 [2]. This grape has been gradually accepted and is exclusively used in making some world class wines, especially in “new world” wine countries [3]. Strongly structured and elegant wines are made from Marselan; the result is that it is regarded as a grape variety which is highly adapted to the taste of Chinese consumers [4].…”
