The Microbiological Quality of Honey as Determined by Aerobic Colony Counts

Abstract: The number of mesophilic aerobic colonies was determined in 72 samples of mono- and multifloral honey from various sources by the plate count and the membrane filter methods. The presence of motile colonies made the plate counts unreliable. The microorganism producing these colonies was identified as Bacillus alvei. Colony counts could only be carried out in 27 of the samples when using the plate count method, while with the membrane filter method the number of colonies was counted in all the samples.

“…As abelhas operárias coletam o néctar e exudações e levam para a colônia (BONVEHI;JORDÁ, 1993;KHAN et al, 2018), transferindo-o para as "abelhas jovens" que o processam e armazenam nos favos. Durante o transporte e o processamento do néctar ocorre a adição de enzimas como a invertase por meio das glândulas hipofaríngea, que transforma a sacarose em glicose e frutose.…”

“…However, raw honey extracted from comb contains pollens, bee wax and other undesirable materials including microorganisms (Subramanian et al ., 2007) and need processing. Several authors have reported the occurrence of undesirable microorganisms in honey (Molan, 1992; Bonvehi & Jordá, 1993; Snowdon & Cliver, 1996; Silva et al ., 2017). Microbial load in honey above 10 2 to 10 4 cfu g −1 poses health concerns for the consumer (Sereia et al ., 2017).…”
